If there’s one vegetable that never seems to disappear from my kitchen, it’s zucchini.
As an Italian American, I grew up eating it in countless ways–from crispy zucchini fritters made alongside my mom to simple side dishes, comforting soups and pasta recipes inspired by my travels throughout Italy. - Buy small zucchini whenever possible. They’re usually sweeter and less watery.
- Don’t overcrowd the pan if you’re trying to brown zucchini.
- Lemon, basil, mint and garlic are some of my favorite flavor partners for zucchini.
- Not every recipe needs salted zucchini. Match the technique to the recipe.

Frequently Asked Questions About Zucchini
When zucchini is in season, it’s easy to end up with more than you know what to do with. Fortunately, it’s one of the most versatile vegetables you can cook. From pasta and soups to fritters, stuffed zucchini, appetizers and hearty side dishes, this collection includes plenty of delicious ways to enjoy every last zucchini.
Although both are summer squash and can usually be substituted for one another, zucchini generally has a slightly firmer texture and more robust flavor. Yellow squash tends to be a bit sweeter and softer when cooked. Both work beautifully in many Italian recipes, including roasted vegetables and pasta dishes.
Usually not. The skin is tender, nutritious and adds both color and texture. The exception is very large cucuzza squash, whose thicker, more fibrous skin should be peeled before cooking.

Yes–though note that the texture will change. Frozen zucchini works best in soups, sauces and cooked dishes where texture isn’t as important.
